In such instances, the butter may become liquefied, but it can be subsequently emulsified and rapidly cooled, resulting in a smoother, more homogeneous consistency upon solidification. Additionally, a white film may appear on the top layer. That is normal and is referred to as fat blossom. It is a thin layer of separated fats from the product.
